Pork With Spiced Sweet Potatoes And Cherry Chutney

  • 1 1/2 cups diced organic sweet potato
  • 1/8 tsp cinnamon
  • 1/8 tsp chili powder
  • 1/2 cup frozen organic unsweetened tart cherries
  • 1 tsp local honey
  • 1 tsp Bragg's organic apple cider vinegar
  • 1/2 tsp grated fresh ginger

Instructions:

  • Preheat your broiler.
  • Place a 3-ounce boneless pork chop on a baking sheet lined with foil 
  • Broil for 12 minutes. 
  • While broiling, heat 2 tsp extra-virgin first cold pressed olive oil in a medium skillet over medium heat. 
  • Sauté sweet potato, cinnamon, chili powder, and a dash of salt for 8 minutes. 
  • In a small saucepan, heat cherries, honey, apple cider vinegar, and ginger for 4 minutes. 
  • Top pork chop with sauce and serve with sweet potatoes.
